There are three angles, and the best choice usually combines them:

Utility (Engineering) — grenades, mobility, scopes. Best for DPS and PvP: warrior, hunter, rogue, Enhancement shaman.
Own gear (Tailoring/Blacksmithing/Leatherworking) — cloth wearers favor Tailoring, plate wearers Blacksmithing, leather classes Leatherworking.
Consumables and gold (Alchemy + Herbalism, Enchanting) — your own flasks and mana potions, and disenchanting for steady income.
